Vegetable Bajhi

Ingredients

Serves: 6

  • Half a Jar of All The Raj Curry Paste
  • 1 small carton or 200ml passatta
  • 4 large potatoes, finely chopped
  • 100g cauliflower florets
  • 1 carrot, finely chopped
  • 75g fresh green peas
  • coriander leaves for garnish (optional)

Preparation method

Prep: 10 mins | Cook: 40 mins

Place the potatoes, cauliflower, carrot and peas into a microwave-safe bowl, cover with cling film, and microwave on High until the vegetables are very hot and starting to soften, about 2 minutes. Remove the cling film, and drain the vegetables in a colander. Or boil in a pan for 10 mins

Place All the Raj Curry paste in a large frying pan and on a medium head warm through then add the partially cooked potatoes, cauliflower, carrot and peas. Cook and stir until the vegetables are tender and coated with spices, add the passatta and cook for about 30 minutes. Sprinkle with coriander leaves.
